Avocado-Papaya Bok Choy Wraps

So after about a week of our raw vegan lifestyle down here in Costa Rica, I’ve been noticing some interesting changes arise in my body and mind. I had heard that there’s a detox period when you shift to a raw vegan diet, as your body adjusts to eating such clean food and starts to process out the toxins – but I honestly sort of dismissed that idea, considering how “healthy” I had perceived my lifestyle beforehand to be.

Well, turns out that attitude came back to bite me, as I realized full on even our so-called “healthy” diets contain plenty of toxins that need to be flushed out! I felt pretty sick for a couple of days, as all those little “scrub brushes” in the massive amounts of raw kale started to flush out the garbage from my system. I’m humbled by this new clean diet and my previous conceptions of how healthy I really was.

Anyway, now that we’re in week 2, we’ve been diving deep into our fitness, mindset, and businesses – which means I’ve been craving something a bit more hearty than salads to keep me going! Today’s mission was to create a meal I could wrap my hands around, and create that satisfaction of chomping into a massive Chipotle burrito. 😉

Creativity in hand, we set to work in the raw kitchen. I’ve discovered that these organic greens are so sturdy, and the perfect vessel to carry our gorgeous fillings. The key to these awesome wraps is the lime and papaya, as they add a unique sweetness and tropical vibe. Personally, I love combining fruits and veggies and coming up with fun new ways to use raw organic produce – there is SO much more to create than just salads!

One thing I’m learning from raw vegan food prep is that our experience of eating is just as affected by the care we put into preparation, as it is by the ingredients. For me, this means creating meals that are beautiful to look at and experience as I eat! Turns out mindfulness goes beyond the yoga mat. 🙂 When we bring mindfulness to our plates – it brings eating to a whole other level! It’s really fun to consider the aesthetics and colors of a meal as you prepare it – simply for the fact of enjoying it all that much more. It’s an act of love for yourself, and for all who enjoy the meal you prepare!

Oh, and in case you were wondering – the creamy avocado in these wraps brings the whole thing together perfectly! (like avocado could ever be anything but perfect!) 🙂 

You can mix and match whatever veggies you love or have on hand, try subbing mango for the papaya… next time, I would even throw a little chili into the mix just to kick it up a notch!

Avocado-Papaya Bok Choy Wraps

1 avocado, chopped

1 cup papaya, chopped

1 tomato, chopped

¼ red onion, chopped

¼ cucumber, chopped

juice of 1 lime

salt and pepper to taste

1-2 tbsp olive oil

handful fresh cilantro, chopped

handful fresh dill, chopped

Sesame seeds to garnish

Several big bok choy leaves

Mix all chopped ingredients in a big bowl, stir with lime juice, olive oil, salt and pepper. Spoon into bok choy leaves and sprinkle with sesame seeds. Wrap your hands around these epic wraps and enjoy!!
