I’m going to be honest: pasta is HANDS-down one of my favorite meals in the entire world. Maybe it’s the 4 summers I’ve spent in Italy, indulging in plates of handmade fettuccine, spaghetti and gnocchi with lovingly-prepared sauces by my host families… but pasta is one of those go-to dishes I turn to for comfort and delight.
However, a bellyful of carbs isn’t exactly the way to energize and nourish your body. While it’s fine to indulge in now and then, this rainbow-colored and firey veggie pasta is a SUPER alternative that’s packed with nutrients and freshness. Personally, I was a bit dubious at first as to whether this could hold up to the pasta name – but it proved itself well!
I’m telling you – your veggie spiralizer is going to be your new best friend. I am convinced now that it is possible to make nearly ANY vegetable approximately 8,302,505 times more fun by spiralizing it.
Firey Fresh Veggie Pasta
2 carrots
2 zucchini
2 cucumbers
3 tomatoes
1/2 onion
1 clove garlic
1 chile
handful basil, chopped
Spiralize the zucchini, carrot and cucumber into pasta form. Combine tomatoes, onion, garlic, basil and chile in food processor or blender, use as sauce over veggie pasta. Dig in! 🙂
